Ingredients
Scale
- 1/2 cup chia seeds
- 2 scoops chocolate protein powder (whey or plant-based)
- 2 tablespoons unsweetened cocoa powder
- 2 cups unsweetened almond milk (or milk of choice)
- 1 tablespoon maple syrup or honey (optional)
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Instructions
- Step 1: Combine Dry Ingredients. In a medium-sized mixing bowl or a large glass jar, whisk together the chia seeds, chocolate protein powder, cocoa powder, and sea salt. Ensure there are no large clumps of protein powder before adding the liquids.
- Step 2: Add Liquid Ingredients. Pour in the almond milk, vanilla extract, and your chosen sweetener. If you are using a protein powder that is already very sweet, you may want to taste the mixture first before adding extra maple syrup or honey.
- Step 3: Whisk and Emulsify. Whisk the mixture vigorously for about two minutes. You want to make sure the chia seeds are fully submerged and the protein powder is completely dissolved into the milk to prevent a gritty texture.
- Step 4: The First Rest. Let the mixture sit at room temperature for about 5 to 10 minutes. Give it one more good stir or a shake if it is in a jar. This step is crucial because it prevents the chia seeds from settling at the bottom and forming a solid clump.
- Step 5: Refrigerate and Set. Cover the bowl or seal the jar and place it in the refrigerator. Let it chill for at least 4 hours, though overnight is best for the thickest, creamiest texture. The seeds will absorb the liquid and create a pudding-like consistency.
