- 2 ripe avocados, pitted and peeled
- 1/2 cup unsweetened cocoa powder
- 1/2 cup chocolate protein powder (whey or plant-based)
- 1/4 cup pure maple syrup or honey
- 1/2 cup unsweetened almond milk (or milk of choice)
- 1 tsp pure vanilla extract
- 1 pinch of sea salt
Instructions
- Cut the avocados in half, remove the pits, and scoop the green flesh into a high-speed blender or a food processor. Ensure your avocados are very ripe for the smoothest consistency.
- Add the cocoa powder, protein powder, maple syrup, almond milk, vanilla extract, and a pinch of salt to the blender. The salt is essential as it enhances the chocolate flavor.
- Pulse the mixture several times, then blend on high speed for about 1-2 minutes. Stop and scrape down the sides with a spatula if necessary to ensure every bit of avocado is fully incorporated and no green lumps remain.
- If the pudding is too thick for your liking, add an extra tablespoon of almond milk at a time until you reach your desired consistency. Taste and add a drop more maple syrup if you prefer a sweeter pudding.
- Transfer the pudding into small bowls or ramekins. While you can eat it immediately, chilling it in the refrigerator for at least 30 minutes allows the flavors to meld and the texture to firm up slightly.
