Delicious and nutritious sweet potato boats filled with seasoned ground beef, black beans, and topped with melted cheese.

- 2 large sweet potatoes
- 1 lb ground beef
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1/2 cup shredded cheddar cheese
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet and bake for 45-60 minutes.
- In a skillet over medium heat, add the ground beef. Cook until browned, then drain excess fat.
- Add the black beans, corn, garlic powder, smoked paprika, salt, and pepper. Stir and cook until heated through, about 5-7 minutes.
- Once the sweet potatoes are cooked, cut them in half lengthwise and scoop some flesh out. Fill with the beef mixture and top with cheese. Bake for an additional 5-10 minutes until the cheese is melted. Garnish with green onions.
Notes
For meal prep, these sweet potato boats store well in the refrigerator for 3 days or can be frozen for 3 months.
