Description

Delicious and nutritious sweet potato boats filled with seasoned ground beef, black beans, and topped with melted cheese.


Ingredients

  • 2 large sweet potatoes
  • 1 lb ground beef
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1/2 cup shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet and bake for 45-60 minutes.
  2. In a skillet over medium heat, add the ground beef. Cook until browned, then drain excess fat.
  3. Add the black beans, corn, garlic powder, smoked paprika, salt, and pepper. Stir and cook until heated through, about 5-7 minutes.
  4. Once the sweet potatoes are cooked, cut them in half lengthwise and scoop some flesh out. Fill with the beef mixture and top with cheese. Bake for an additional 5-10 minutes until the cheese is melted. Garnish with green onions.

Notes

For meal prep, these sweet potato boats store well in the refrigerator for 3 days or can be frozen for 3 months.
