Description

Delicious and nutritious banana muffins perfect for breakfast or a post-workout snack, packed with protein and healthy ingredients.


Ingredients

  • 2 ripe bananas
  • 1 cup oats
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/4 cup honey or maple syrup
  • 1/2 cup Greek yogurt
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add the oats, protein powder, honey or maple syrup, Greek yogurt, eggs, baking powder, vanilla extract, cinnamon, and salt to the mashed bananas. Stir until combined.
  4. Pour the batter into the muffin tin, filling each cup about 2/3 full. Bake for 18-22 minutes or until a toothpick comes out clean.
  5. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

Use ripe bananas for better sweetness. Don’t overmix to maintain fluffiness.
