Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or dairy-free alternative)
  • 1 scoop protein powder (vanilla or unflavored)
  • 1/2 cup blueberries (fresh or frozen)
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking dish.
  2. Combine the rolled oats, protein powder, baking powder, and salt in a mixing bowl.
  3. Mix the milk, lemon juice, lemon zest, honey, and vanilla extract in another bowl until blended.
  4. Pour the wet mixture into the dry ingredients and stir until well combined.
  5. Fold in the blueberries gently.
  6. Spread the mixture evenly in the greased baking dish.
