- 1 pound ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, diced
- 1 zucchini, diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Chop the onion and garlic while the oil warms.
- Add the chopped onion and minced garlic to the pot. Sauté until softened and fragrant, about 3-4 minutes.
- Add the ground turkey to the pot. Cook, breaking it apart, until golden brown. Stir in the bell pepper, carrots, and zucchini, cooking for another 5-7 minutes until softened.
- Pour in the kidney beans, black beans, crushed tomatoes, and vegetable broth. Add chili powder, cumin, salt, and pepper. Bring to a boil, reduce heat, and let simmer for 30-40 minutes. Adjust seasoning as necessary and serve warm.
