Ingredients

- 2 medium zucchinis
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour (or almond flour for gluten-free)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 tablespoon chopped fresh parsley (optional)
- Olive oil for frying
Instructions
- Grate the zucchinis and place them in a clean kitchen towel or cheesecloth to squeeze out excess water.
- In a mixing bowl, combine the squeezed zucchinis with salt and let it sit for about 10 minutes, then squeeze out more moisture.
- In a separate bowl, mix the flour, Parmesan cheese, egg, black pepper, garlic powder, onion powder, and parsley until well combined.
- Fold in the zucchini mixture until everything is combined thoroughly.
- Heat a skillet over medium heat and add a tablespoon of olive oil. Drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly to form patties.
- Cook for about 3-4 minutes on each side, or until golden brown. Remove from the skillet and place on paper towels to absorb excess oil.
Notes
Serve with a dollop of sour cream or a tangy yogurt dip. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
