- 4 Chicken breasts
- 1/4 cup Soy sauce
- 2 tbsp Honey
- 2 cloves Garlic, minced
- 1 tbsp Ginger, grated
- 1 tbsp Vegetable oil
- 2 cups Rice (jasmine or basmati)
- 2 cups Mixed fresh vegetables (bell peppers, broccoli, carrots)
- 2 Green onions, sliced
- 1 tbsp Sesame seeds
Instructions
- In a bowl, mix soy sauce, honey, minced garlic, and grated ginger to create a marinade.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- In a pan, heat vegetable oil over medium heat and cook the marinated chicken for 6-7 minutes on each side.
- Remove the chicken from the pan and add mixed vegetables, stir-frying until tender.
- Serve the chicken over rice, topped with stir-fried veggies, green onions, and sesame seeds.
Notes
For a vegetarian option, substitute chicken with tofu, and consider using low-sodium soy sauce for a healthier choice.
