Description

A wholesome and nutritious meal combining rich flavors of salmon, protein-packed quinoa, and fresh vegetables.


Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 2 fillets of salmon
  • 2 cups arugula
  • 1 cucumber, thinly sliced
  • 1/2 cup plain yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water or broth, and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until liquid is absorbed.
  2. While the quinoa is cooking, season the salmon with salt, pepper, and a little olive oil. Cook the salmon either in a skillet over medium heat for about 4-5 minutes per side or bake in the oven at 350°F (175°C) for 12-15 minutes, until cooked through.
  3. In a small bowl, mix the yogurt, dill, lemon juice, salt, and pepper to create the dressing.
  4. Once the quinoa is done, fluff it with a fork and divide it among serving bowls. Top with arugula, cucumber slices, and the cooked salmon. Drizzle with the creamy dill dressing and enjoy!

Notes

Serve warm. For added flavor, try marinating the salmon in lemon juice and herbs before cooking. Experiment with different dressings for a unique twist.
