- 1 pound boneless, skinless chicken breasts
- 1 cup whole wheat flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 eggs, beaten
- 1 cup breadcrumbs (preferably whole wheat)
- Cooking spray or olive oil for baking
Instructions
- Preheat your oven to 400°F (200°C). Cut the chicken breasts into small bite-sized pieces to ensure they cook evenly.
- Mix together the whole wheat flour, garlic powder, onion powder, paprika, salt, and pepper in a bowl.
- Beat the eggs in another bowl. Prepare the breadcrumbs in a third bowl. Dredge each piece of chicken in the flour mixture, then dip it into the egg wash, and coat it with breadcrumbs.
- Place the chicken pieces on a baking sheet lined with parchment paper. Spray lightly with cooking spray or drizzle with olive oil. Bake for 15-20 minutes, flipping halfway, until golden and cooked through.
