Description

Ingredients

  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil
  • 1/3 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine almond flour, rolled oats, baking soda, and salt.
  3. In another bowl, mix together melted coconut oil, maple syrup or honey, and vanilla extract until smooth.
  4. Add the wet mixture to the dry ingredients and stir until combined. Fold in dark chocolate chips.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
  6. Bake for 10-12 minutes or until golden brown.
  7. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to one week or freeze for up to three months. Experiment with different nut flours or add nuts/seeds for varied flavors.
