Ingredients

  • 1 cup whole wheat flour
  • 1 cup oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/4 cup milk (dairy or plant-based)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts or dried fruit (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
  2. Mix together the whole wheat flour, oats, baking powder, baking soda, salt, and cinnamon in a large bowl.
  3. In another bowl, combine the honey (or maple syrup), applesauce, and milk until fully incorporated.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in optional nuts or dried fruit.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.

Notes

For added flavor, serve with almond butter or Greek yogurt. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
