Description

Delicious and nutritious breakfast cookies made with oats, almond butter, and ripe bananas, perfect for a quick breakfast or snack.


Ingredients

  • 1 cup oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 ripe banana, mashed
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup mix-ins (nuts, seeds, dried fruits, or chocolate chips)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together oats, almond butter, honey (or maple syrup), mashed banana, vanilla extract, and baking soda until well combined.
  3. Fold in your choice of mix-ins ensuring they are evenly distributed.
  4. Scoop tablespoon-sized amounts of dough onto the baking sheet and flatten each cookie slightly with a fork.
  5. Bake for 10-12 minutes or until the edges are golden.
  6. Allow cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack.

Notes

Store in an airtight container. These cookies can be kept at room temperature for up to 3 days or stored in the refrigerator for about a week. For longer storage, freeze them for up to 3 months.
