- 1/3 cup melted coconut oil

- 1 teaspoon baking soda

- 1 teaspoon cinnamon
- 1 and 1/2 cups whole wheat flour
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- Mash the ripe bananas in a mixing bowl until smooth, leaving a few small lumps.
- Stir in honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
- Add baking soda, salt, and cinnamon, and mix well.
- Gradually add whole wheat flour to the wet mixture, stirring just until combined.
- Fold in the optional chopped nuts or chocolate chips if desired.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring to a wire rack.

Store leftover muffins in an airtight container at room temperature for up to 3 days. Freeze for up to 3 months.
