- 3 ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups whole wheat flour
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Mash the bananas with a fork, stir in the melted coconut oil.
- Mix in honey or maple syrup, eggs, and vanilla extract until well blended.
- Sprinkle baking soda and salt, add cinnamon, and gradually mix in flour until just incorporated.
- Pour the batter into the greased loaf pan and smooth the top. Bake for 60-65 minutes until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Serve warm or at room temperature. Store wrapped for up to 3 days or in the fridge for about a week. Freeze for longer storage.
