- 1 bell pepper, chopped
- 1 teaspoon chili powder
- Salt and pepper to taste

Instructions
- Brown the beef in a large skillet over medium heat until browned, breaking it apart as it cooks; drain excess fat.
- Add the chopped onion, minced garlic, and bell pepper; cook until vegetables soften, about 5 minutes.
- Stir in the enchilada sauce, black beans, corn, chili powder, salt, and pepper to combine.
- Bring the mixture to a simmer; cook for about 5 minutes. Sprinkle cheese on top, cover, and cook until melted, about 2-3 minutes.
- Garnish with fresh cilantro and serve warm with tortilla chips or tortillas.
