- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp paprika
- 1/2 tsp dried thyme
- 1 tbsp olive oil
- Optional: chopped parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic to the skillet and sauté for about 3-4 minutes.
- Add the ground beef and cook until browned.
- Stir in the diced potatoes, beef broth, salt, pepper, paprika, and thyme.
- Bring the mixture to a boil, then reduce the heat to low and cover the skillet.
- Allow it to simmer for about 20-25 minutes, stirring occasionally.
- Garnish with chopped parsley if desired, and serve warm.
Notes
For extra flavor, add cheese in the last few minutes of cooking. This dish can be customized with your favorite vegetables.
