- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 2 tbsp olive oil
- 1 cup beef broth
- 1 cup green peas (optional)
- Chopped parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until translucent.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned.
- Stir in diced potatoes, salt, pepper, and paprika. Pour in beef broth and bring to a simmer. Cover and cook for about 15-20 minutes, or until the potatoes are tender, stirring occasionally.
- If using, add green peas in the last 5 minutes of cooking. Garnish with chopped parsley before serving.
Notes
For a bit of heat, add cayenne pepper or red pepper flakes. Substitute ground beef with turkey or chicken for a leaner option. Add other veggies like carrots or bell peppers for added nutrition.
