Ingredients

  • 2 ripe peaches
  • 1 cup Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Pinch of salt
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat the grill to medium heat.
  2. Prepare the peaches by cutting them in half and removing the pits.
  3. Season the cut sides of the peaches with olive oil and sprinkle with salt.
  4. Grill the peaches cut-side down for 4-5 minutes until grill marks appear.
  5. Let the peaches cool for a minute after removing them from the grill.
  6. Assemble the dish by placing a scoop of Greek yogurt in serving bowls and drizzling honey over it.
  7. Top with the grilled peach halves.
  8. Garnish with fresh mint leaves and serve immediately.

Notes

Enjoy with a crisp white wine or herbal tea. Best eaten fresh, but leftovers can be stored in the refrigerator for up to 24 hours.
