Description

Delightful chicken skewers marinated in a zesty lemon and herb mixture, perfect for outdoor meals or weeknight dinners.

Ingredients

Scale
  • 1 lb chicken breast, cut into cubes
  • 2 tablespoons olive oil
  • Juice of 2 lemons
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Skewers (soaked in water if wooden)

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic powder, oregano, thyme, salt, and pepper.
  2. Add chicken cubes to the marinade and let it sit for at least 30 minutes to allow the flavors to meld.
  3. Preheat grill to medium-high heat. Thread the marinated chicken onto the skewers. Grill chicken skewers for 10-15 minutes, turning occasionally, until cooked through and no longer pink in the center.
  4. Serve warm, optionally with a side of grilled vegetables for a complete meal.

Notes

For extra flavor, let the chicken marinate longer. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F.
