Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/2 cup coconut milk
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a bowl, combine the coconut milk, lime juice, garlic, ginger, soy sauce, olive oil, salt, and pepper.
  2. Add the shrimp to the marinade and cover. Let it sit in the refrigerator for 30 minutes.
  3. Preheat your grill to medium-high heat and thread the marinated shrimp onto skewers.
  4. Grill the skewers for 2-3 minutes on each side or until the shrimp turn pink and opaque.
  5. Remove from grill and garnish with chopped cilantro before serving.
