Description

A refreshing salad that combines sweet grilled apricots with savory grilled chicken, perfect for warm days.


Ingredients

  • 2 boneless chicken breasts
  • 1 cup apricots, halved and pitted
  • 4 cups mixed greens
  • 1/4 cup red onion, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts, toasted
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper.
  2. Grill the chicken for about 6-7 minutes on each side or until fully cooked and no longer pink in the center.
  3. Place the halved apricots on the grill in the last few minutes of grilling. Cook until softened, about 2-3 minutes.
  4. Combine the mixed greens, sliced red onion, crumbled feta cheese, and toasted walnuts in a large bowl. Slice the grilled chicken and add it to the salad, topping with grilled apricots.
  5. Drizzle the salad with olive oil and balsamic vinegar, then toss gently to combine before serving.

Notes
