Instructions

  1. If you are using all-purpose flour, place it in a microwave-safe bowl and heat it in 30-second intervals until it reaches 160°F. This ensures the flour is safe to consume raw. Let it cool completely before moving to the next step.
  2. In a medium mixing bowl, whisk together the Greek yogurt, maple syrup (or honey), and vanilla extract. Stir until the mixture is smooth and the sweetener is fully incorporated into the yogurt.
  3. Slowly add the heat-treated flour and a pinch of salt to the yogurt mixture. Use a spatula to fold the flour in until a thick, dough-like consistency forms. If the dough is too sticky, add an extra tablespoon of flour.
  4. Gently fold in the mini chocolate chips. Mini chips work best here because they distribute evenly throughout the small bites, ensuring a bit of chocolate in every single mouthful.
  5. Use a small cookie scoop or a tablespoon to portion out the dough. Roll the portions between your palms to create smooth spheres. Place them on a plate or a parchment-lined tray.
