- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/2 cup crumbled feta cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt, to taste
- Pepper, to taste
- Olive oil, for greasing
- 2 cups cooked quinoa or rice
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, chopped
- Tzatziki sauce, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground turkey, breadcrumbs, feta cheese, egg, garlic, oregano, salt, and pepper in a large bowl.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place the meatballs on a greased baking sheet and bake for 20-25 minutes.
- Prepare your quinoa or rice according to package instructions while the meatballs bake.
- Layer the cooked quinoa or rice in a bowl, add the meatballs, and top with cucumber, tomatoes, onion, olives, and tzatziki sauce.
