Description

A vibrant and flavorful Mediterranean bowl featuring grilled chicken, fresh veggies, and creamy tzatziki.


Ingredients

  • 1 lb chicken breast, cut into cubes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • Tzatziki sauce for serving
  • Fresh parsley, chopped for garnish

Instructions

  1. Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Add the chicken cubes and mix well. Marinate for at least 30 minutes.
  2. Preheat your grill or grill pan to medium-high heat.
  3. Thread the marinated chicken onto skewers. Grill for about 10-12 minutes, turning occasionally, until cooked through.
  4. Layer the cooked rice or quinoa in serving bowls. Add the grilled chicken, followed by cherry tomatoes, cucumber, red onion, and feta cheese. Drizzle with tzatziki sauce and garnish with parsley. Serve warm.
