Deliciously nostalgic gluten-free cookies made with almond and coconut flour, sweetened naturally with honey or maple syrup.

- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup coconut oil, melted
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the almond flour, coconut flour, baking soda, and salt.
- In another bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract.
- Gradually mix the dry ingredients into the wet ingredients until a dough forms. Stir in chocolate chips if desired.
- Scoop out balls of dough onto the prepared baking sheet, leaving space between each.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a richer flavor, try toasting the almond flour slightly before mixing. Store leftovers in an airtight container for up to 5 days.
