Instructions
- Slice the chicken breast into thin strips, ensuring they are approximately uniform for even cooking. Next, chop the garlic scapes into 1- to 2-inch pieces, and slice the bell peppers into thin strips.
- Heat the olive oil in a large pan over medium heat. Add the chicken strips to the pan, spreading them out in a single layer.
- Cook the chicken for about 5-7 minutes until browned and cooked through. Add the chopped garlic scapes and bell peppers to the pan.
- Stir-fry the mixture for an additional 3-5 minutes, or until the vegetables are tender but still vibrant in color. Stir in the soy sauce and grated ginger in the last minute of cooking.’
