A delightful dish combining caramelized onions, earthy mushrooms, and creamy Gruyère cheese in a buttery pie crust.

- 1 pie crust
- 2 large onions, thinly sliced
- 8 oz mushrooms, sliced
- 2 tbsp olive oil
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- 1 cup grated Gruyère cheese
- 1 cup sour cream
- 2 eggs
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized and soft, about 20 minutes.
- Add the sliced mushrooms and thyme to the pan. Cook until the mushrooms are browned and tender. Season with salt and pepper.
- In a mixing bowl, combine the sour cream, eggs, and half of the grated Gruyère cheese. Whisk until smooth.
- Spread the caramelized onion and mushroom mixture over the pie crust. Pour the sour cream mixture on top and sprinkle with remaining Gruyère cheese.
- Bake for 30-35 minutes, or until golden brown and set.
- Allow to cool for a few minutes before slicing.
Notes
For a richer flavor, add balsamic vinegar to the onions. Store leftovers in an airtight container for up to 3 days.
