Description

A comforting dish combining tender chicken, caramelized onions, and gooey cheese baked into a fluffy rice base.


Ingredients

  • 1 pound chicken breast, diced
  • 2 cups cooked rice
  • 1 cup French onion soup
  • 1 cup shredded cheese (such as Swiss or Gruyère)
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the sliced onions and cook until softened and caramelized, about 10-15 minutes.
  3. In a large bowl, combine the diced chicken, cooked rice, French onion soup, caramelized onions, and half of the shredded cheese. Season with salt and pepper and mix well.
  4. Transfer the mixture to a greased baking dish, spread it out, and top with the remaining cheese. Bake for 25-30 minutes until cooked through and bubbly.

Notes

For extra flavor, add garlic or herbs while caramelizing the onions. You can use rotisserie chicken for quicker prep.
