Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 large eggs
  • Edible flowers (like violets or pansies) for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry mixture to the creamed butter mixture, alternating with the milk, mixing just until incorporated.
  6. Pour the batter into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before turning them out onto wire racks to cool completely.
  8. Frost as desired and decorate with edible flowers.

Notes

Use room temperature ingredients for a smoother batter. Don’t overmix to keep the cake light.
