Ingredients

- 2 filets of white fish (such as cod or halibut)
- 1 bulb fennel, thinly sliced
- 1/2 cup black olives, pitted and halved
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, thinly sliced
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Arrange the sliced fennel at the bottom of a baking dish.
- Place the fish filets on top of the fennel.
- Scatter the black olives and minced garlic over the fish.
- Drizzle the olive oil on top, and season with salt and pepper.
- Lay the lemon slices on top.
- Cover the dish with foil and bake for 20-25 minutes.
- Garnish with fresh parsley before serving.
Notes
This dish pairs wonderfully with crusty bread or a light salad. Leftovers can be stored in an airtight container for up to 2 days.
