Ingredients

  • 2 cups corn (fresh or frozen)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup cotija cheese, crumbled
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Combine the corn, olive oil, chili powder, garlic powder, smoked paprika, salt, and pepper in a bowl. Mix thoroughly until the corn is evenly coated.
  3. Season the chicken breasts generously with salt and pepper. Grill the chicken for 6-7 minutes on each side or until it reaches 165°F.
  4. Add the corn mixture to the grill during the last few minutes until slightly charred. Remove both from the grill.
  5. Top the chicken with charred corn, crumbled cotija cheese, and chopped cilantro. Serve with lime wedges.
