- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup eggnog
- 1/4 cup granulated sugar (for rolling)
- 1 teaspoon ground cinnamon (for rolling)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Beat in the eggs, vanilla extract, and eggnog until well combined.
- Gradually mix in the dry ingredients until just combined.
- In a small bowl, combine the rolling sugar with cinnamon.
- Scoop out dough balls and roll them in the sugar-cinnamon mixture before placing them on prepared baking sheets.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool before serving.
Notes
Serve with a glass of eggnog or hot cocoa. Store in an airtight container for up to 1 week, or freeze for longer storage.
