Description

Delicious Asian-inspired bowls filled with seasoned meat, fresh veggies, and wholesome rice, perfect for a quick weeknight meal.


Ingredients

Scale
  • 1 lb ground pork or chicken
  • 2 cups coleslaw mix
  • 1 cup mushrooms, sliced
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • Salt and pepper to taste
  • Cooked rice or cauliflower rice

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Brown the meat, cooking until browned and fully cooked through.
  4. Add mushrooms and cook until softened.
  5. Cook the coleslaw mix until wilted, stirring frequently.
  6. Pour in soy sauce, stirring to combine all ingredients.
  7. Season with salt and pepper to taste.
  8. Serve over cooked rice or cauliflower rice, garnishing with green onions.
