- 4 flour tortillas
- 1 cup shredded mozzarella cheese
- 1/2 cup bell peppers, chopped
- 1/2 cup mushrooms, sliced
- 1/2 cup spinach, chopped
- 1/4 cup pizza sauce
- 1 teaspoon Italian seasoning
- Olive oil for cooking
Instructions
- Preheat a non-stick skillet over medium heat.
- In a bowl, combine the chopped vegetables, pizza sauce, and Italian seasoning, mixing thoroughly to coat the vegetables evenly.
- Place a tortilla in the preheated skillet. Spread a layer of cheese on half of the tortilla. Add a portion of the veggie mixture over the cheese, then fold the tortilla in half.
- Cook the quesadilla until the bottom is golden brown, then carefully flip it and cook the other side until crispy and the cheese has melted. Repeat with the remaining tortillas. After cooking, slice into wedges and serve warm.
Notes
Serve with a side of extra pizza sauce for dipping. These quesadillas can be refrigerated for up to 3 days and reheated in a skillet.
