Description

Delicious, flaky pastry rolls stuffed with a rich mixture of spinach and feta cheese, perfect as appetizers or a light lunch.


Ingredients

Scale
  • 1 package of phyllo dough
  • 1 cup fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until soft and fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted. Remove from heat and mix in the crumbled feta cheese. Season with salt and pepper.
  4. Take a sheet of phyllo dough and brush it lightly with olive oil. Place another sheet on top and brush it again. Spoon a portion of the filling along one edge, roll it tightly, folding in the sides.
  5. Place the rolls on a baking sheet lined with parchment paper. Brush the tops with the egg wash and bake for 20-25 minutes until golden brown.
  6. Serve warm and enjoy!

Notes

Keep phyllo dough covered while working to prevent it from drying out. Can be made ahead and baked just before serving.
