Description

A quick and nutritious dish that combines quinoa, eggs, and vegetables for a delightful meal any time of the day.

Ingredients

Scale
  • 1 cup cooked quinoa
  • 2 eggs
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 green onion, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium heat.
  2. Add the mixed vegetables and sauté for 3-4 minutes until tender.
  3. Push the vegetables to one side and crack the eggs into the other side, scrambling until fully cooked.
  4. Stir in the cooked quinoa and soy sauce, mixing everything together.
  5. Season with salt and pepper to taste.
  6. Garnish with chopped green onions and serve hot.

Notes

Use leftover quinoa to simplify preparation. Feel free to substitute vegetables and use low-sodium soy sauce for a healthier option.
