Description

Ingredients

  • 1 cup of rice
  • 1 can of black beans, drained and rinsed
  • 2 cups of water or vegetable broth
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Begin by heating the olive oil in a pot over medium heat. Chop the onion and mince the garlic.
  2. Add the chopped onion and minced garlic to the pot and sauté until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the cumin and cook for another minute. Add the rice and stir to coat with the onion and garlic mixture.
  4. Pour in the water or vegetable broth, bring to a boil, then gently stir in the black beans. Reduce heat, cover, and simmer for 18-20 minutes, until the rice is tender.
  5. Season with salt and pepper, fluff with a fork, and garnish with cilantro if desired.
