Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 1/2 cup raisins
- 1/2 cup olives, sliced
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat until it shimmers.
- Add the chopped onions, bell pepper, and minced garlic to the skillet and cook until the onions are translucent.
- Stir in the ground beef and cook until fully browned.
- Add the diced tomatoes, raisins, sliced olives, cumin, and oregano, and season with salt and pepper. Allow to simmer for about 20 minutes.
- Serve warm over cooked rice or alongside tortillas.
Notes
For a healthier option, substitute ground turkey or chicken. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
