A delightful one-pot pasta dish combining garlic butter shrimp with tender pasta, perfect for busy weeknights.


Ingredients

  • 8 oz pasta (spaghetti or linguine)
  • 1 lb shrimp (peeled and deveined)
  • 4 tbsp butter
  • 4 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup spinach (fresh)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
  4. Add the halved cherry tomatoes and fresh spinach to the pot; cook until spinach wilts.
  5. Add the pasta and cover with water, seasoning generously with salt and pepper. Bring to a boil and cook until al dente.
  6. Stir in heavy cream and grated Parmesan until well combined.
  7. Remove from heat, garnish with fresh parsley, and serve immediately.

Notes

For extra flavor, consider adding a pinch of red pepper flakes when sautéing the garlic. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
