- 1 can chickpeas, drained and rinsed
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 garlic clove, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- 1 tablespoon flour (optional for binding)
- Mini pita or lettuce cups
- Diced tomatoes
- Cucumber, diced
- Tahini or yogurt dressing
Instructions
- In a food processor, combine the chickpeas, fresh parsley, cilantro, minced garlic, cumin, coriander, salt, pepper, and flour. Pulse until well combined but still a bit chunky.
- Transfer the falafel mixture into a bowl. Form small balls or patties, ensuring they are tightly packed.
- Heat oil in a frying pan over medium heat. Add falafel balls in batches, cooking until golden brown on all sides, about 3-4 minutes per side. Remove and drain on paper towels.
- Assemble mini falafel cups with a few falafel in mini pitas or lettuce cups. Top with diced tomatoes, cucumbers, and drizzle with tahini or yogurt dressing. Serve immediately.
