- 2 lbs beef stew meat, cut into cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, cubed
- 1 cup green beans, chopped
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Set the Instant Pot to ‘Sauté’ and heat the olive oil until shimmering.
- Add the beef stew meat to the pot and brown it on all sides, allowing about 5-7 minutes for this step.
- Add the chopped onion and minced garlic to the beef. Sauté for another 2-3 minutes until the onion begins to soften. Stir in the tomato paste, dried thyme, dried rosemary, salt, and pepper.
- Add the sliced carrots, cubed potatoes, and chopped green beans. Pour in the beef broth and stir to combine everything well.
- Close the lid of the Instant Pot, set it to ‘Sealing,’ and cook on ‘Manual’ for 35 minutes. Once the cooking is complete, perform a quick release of the pressure.
- Stir the stew to mix the flavors, and taste to adjust seasoning if necessary before serving.
Notes
For a thicker stew, mix a tablespoon of cornstarch with a small amount of water and add it to the stew after cooking. You can also customize the vegetables based on your preferences.
