Description

A delightful dish that brings the vibrant flavors of the Mediterranean to your table, packed with nutrition and protein.

Ingredients

Scale
  • 2 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 2 grilled chicken breasts, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese. Toss to mix well.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper. Pour over the salad.
  3. If the grilled chicken is uncooked, grill it until it reaches an internal temperature of 165°F (6-7 minutes per side). Let it rest before slicing.
  4. Drizzle the dressing over the salad and toss gently. Top with sliced grilled chicken and serve immediately.

Notes

Best served fresh; store leftovers in an airtight container and keep dressing separate to prevent sogginess.
