Ingredients

- 2 cups carrots, chopped
- 1 cup lentils, rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a crockpot, combine the chopped carrots, rinsed lentils, diced onion, and minced garlic.
- Add the vegetable broth and spices (cumin, coriander, cinnamon, salt, and pepper). Drizzle olive oil over the mixture and stir well to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the lentils are tender.
- Serve hot, garnished with fresh parsley.
Notes
Add a dollop of yogurt or sprinkle of feta for extra flavor. This stew can also be stored in an airtight container for up to 4 days in the refrigerator or frozen for up to 3 months.
