- 4 chicken thighs
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes
- 2 cups spinach
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- In a skillet, heat olive oil over medium heat. Sear the chicken thighs until browned on both sides, about 4-5 minutes per side.
- Transfer the chicken to the crockpot.
- In a separate bowl, mix the heavy cream, chicken broth, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper. Pour this mixture over the chicken in the crockpot.
- Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
- During the last 30 minutes of cooking, add the spinach and let it wilt. Serve with pasta or rice, and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. For best results, use bone-in chicken thighs.
