- 2 pounds beef stew meat
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: 1 cup frozen peas
Instructions
- Add the beef stew meat, potatoes, carrots, onion, and garlic to a slow cooker.
- Mix together the beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper in a separate bowl.
- Pour this mixture over the beef and vegetables in the slow cooker.
- Stir to combine all the ingredients, cover the slow cooker, and cook on low for 7-8 hours or on high for 3-4 hours until the beef is tender.
- If using, add the frozen peas in the last 30 minutes of cooking.
- Serve the stew warm, ensuring everyone gets a hearty portion!
