- 2 cups potatoes, peeled and diced
- 1 cup fresh spinach, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion becomes translucent.
- Add the diced potatoes and vegetable broth to the pot. Bring the mixture to a boil.
- Once boiling, reduce the heat and let the soup simmer until the potatoes are tender, about 15-20 minutes. Stir in the chopped spinach and cook for another 5 minutes.
- Using an immersion blender, blend the soup until it’s smooth. Then, stir in the heavy cream and season with salt and pepper to taste. Serve hot and enjoy your warm, creamy soup!
