Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup mixed vegetables (bell peppers, peas, carrots)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat until it shimmers.
  2. Add the diced chicken to the skillet and cook until browned and cooked through, about 6-7 minutes.
  3. Stir in the garlic powder, salt, and pepper, mixing well.
  4. Pour in the rice and chicken broth; bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 15 minutes.
  6. Uncover and stir in mixed vegetables; continue cooking for an additional 5-10 minutes until tender.
  7. Remove from heat and let sit covered for a few minutes.
  8. Fluff the rice with a fork, garnish with parsley if desired, and serve warm.

Notes
