- Jumbo pasta shells
- 1 cup ricotta cheese
- 1 cup spinach (fresh or thawed frozen)
- 2 cups mozzarella cheese (1 cup for filling, 1 cup for topping)
- 1/2 cup Parmesan cheese
- 2 cloves garlic (minced)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 cups marinara sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
- In a large bowl, mix together ricotta cheese, spinach, 1 cup of mozzarella cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper.
- Stuff each cooked pasta shell with the cheese and spinach mixture.
- Spread a layer of marinara sauce in a baking dish. Place stuffed shells on top, pour more marinara over the shells, and sprinkle remaining mozzarella cheese on top.
- Cover the dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let the dish cool slightly before serving.
Notes
These stuffed shells can be made ahead of time and are great for meal prep. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
