Ingredients

- Olive oil

- Red onion
- Avocado
- Fresh cilantro
- Lime wedges
Instructions
- Preheat a skillet over medium-high heat. Pat the fish fillets dry and sprinkle the blackening seasoning on both sides.
- Add olive oil to the skillet and place the seasoned fish fillets in it. Cook for 3-4 minutes on each side until blackened and cooked through.
- In serving bowls, layer the base with cooked rice or quinoa, then add black beans, corn, tomatoes, red onion, and avocado.
